A mouth-watering Victoria sponge cake…

Yesterday I wrote a post about Queen Victoria’s Day in Canada and I reckoned that I present you my (a bit) healthy recipe for a conservative, delicious and tender Victoria sponge cake!
The Victoria sandwich cake (it is the other name for it) is a kind of light and fluffy dough made of flour, eggs, and sugar. It is simply called thanks to Queen Victoria, who used to eat a slice of this sweet with her afternoon tea. An original and classic version of Victoria sponge cake has got raspberry jam and whipped double cream between two sponge cakes. That is why British people often name it with the phrase: „sandwich cake”.
As I said, my recipe is pretty healthy. I only replaced some typical ingredients from original cake, like plain flour with rye flour and sugar with xylitol.
All in all, I guess you’ll deal with this list of ingredients to prepare to bake the cake on your own in the kitchen. Enjoy your meal!
A recipe: Victoria sponge cake
For the batter
200 g rye flour
150 g xylitol
150 g natural yoghurt
2 tablespoons melted butter or coconut oil
1 teaspoon baking powder
1 teaspoon vanilla sugar
For the filling
1 can cold coconut milk
150 g raspberry or strawberry home-made jam
For the top
raspberries or strawberries to decorate
To make the batter
Tip the rye flour into a bowl. Add baking powder, xylitol and vanilla sugar. Mix it. To another bowl add eggs. Beat them. Add some natural yoghurt and coconut oil. Pour this mixture into the bowl with dry ingredients and stir it together until well-combined.
Put the batter to two separate round metal baking trays with baking paper. Bake it in an oven (180C) for 20 minutes.
To make the filling
Remove the cakes from the oven and let them cool. Leave until completely cold. Open a can of coconut milk and take the solid full-fat part from the top. Spread it on one of the cake. Next, put some jam on the coconut cream. Put the other cake on top.
To make the top
Slice your fruit and put them on the top of the second cake.
You really should taste it. I swear you won’t regret it!
