The first half of August has just nearly passed! Despite the fact that our summer holidays 2020 are going to finish soon, the unpredictable weather is constantly taking us by a surprise!

I thought that ongoing scorching hot temperatures had to be a nightmare for some people and I concluded I might distribute a genial recipe for such a ‚gruelling’ atmospheric conditions.

Those readers who are fond of refreshing and frigid dishes should definitely try out this cooking description immediately!

This meal is – beyond the shadow of a doubt – undemanding and uncomplicated. I bet all of you are having these first-primary food ingredients in your kitchen!

Summer pudding

  • 3 tsps cocoa powder
  • 3 tbsps potato starch
  • a handful of chopped dark chocolate
  • 50g condensed milk
  • 100ml double cream
  • 200ml milk
  • 2 beaten egg yolks
  • a handful of chopped peanuts
  • a handful of favourite berries (blackberries, cranberries, raspberries)

Firstly, prepare a small pot. Pour condensed milk, double cream and 100 ml of milk into the jug. Heat the oven and place the saucepan onto the medium heat. Let it boil. In the meantime, take a small bowl. Pour the rest of 100 ml of cold milk into the bowl. Add egg yolks and stir until it smooths. Add cocoa powder and potato starch to the mixture. Mix it well until well-combined. Pour the mixture into the hot milk and cream fluid. You must do that really rapidly. Stir the pudding until it thickens. Put the jug onto the small heat and let it cook for 2-3 minutes. Let the mixture cool and put it into the fridge.

Serve your pudding in a small party bowl or a deep plate. Sprinkle it with your favourite nuts, chopped chocolate and add some your best-loved berries.

Summer pudding – healthier method

  • 2 tsps cocoa powder
  • 2 tbsps potato starch
  • a handful of chopped dates
  • 150ml milk
  • 50ml cold water
  • 1 beaten egg yolk
  • a handful of chopped nuts (peanuts, cashew)
  • a handful of favourite berries (blackberries, cranberries, raspberries)

At first, mix water with egg yolk, cocoa powder and potato starch. Stir it until well-combined. Pour milk into a saucepan. Heat the oven and place the jug onto the high heat. Let the pot boil. Pour the mixture of starch and water into the hot milk. Remember to do that quickly. Put the jug onto the small heat and let it cook for 2-3 minutes. Stir the pudding until it thickens. Let the mixture cool and put it into the fridge.

Serve your pudding in a small party bowl or a deep plate. Sprinkle it with your beloved nuts, chopped dates and add some your preferred berries.
